Healthy Sloppy Joes
Sloppy Joes grow up…this is a childhood favorite of mine done
healthier. No canned Sloppy Joe sauce; just fresh ingredients with
a few quick fix helpers like ketchup and mustard! You can use lean
ground beef if you wish or even vegetarian crumbles. The ground
chicken or turkey variety is as close as you can get while cutting
out saturated fat and calories.

Cream of Tomato Bisque with Garlic Basil Croutons
Nothing says comfort and home like a warm bowl of soup, even in the
summer! I first fell in love with the power of the nut cream when I
was a vegan several years ago. I longed for my old favorites like
cream of mushroom, broccoli, etc… and learned how to substitute a
quick homemade nut cream for cream. It is so creamy and delicious
that you can even win over die-hard dairy enthusiasts! This soup is
a winner for a great creamy soup to serve with a vegetarian or meat
meal while still being kosher!

Spinach Avocado Mango Salad
This is another winning salad recipe from my friend Karen Setzen,
who is a true gourmet with a heart of gold. The original recipe had
a lot of sugar and oil and no citrus, I recently made this dressing
healthier. The salad is beautiful to look at and tastes so
refreshing with great texture and bright flavors.
