I am a big believer that everything is okay in moderation and that's how I cook. But I get a lot of requests for healthy substitutes for margarine. The latest was in a butternut squash kugel (for the recipe, go to the website). Any ideas? Does something like applesauce or prune puree always work? What are the appropriate proportions? And while we're on the topic, I think cookies should be made from margarine and white and brown sugar, not spinach and beets! I actually think that if you keep making vegetables in creative ways and serving salad every night, eventually your kids will start to eat it on their own. I won't give my kids anything to eat that I find revolting so rice cereal and baby food peas were never a big seller around here!
Cookies should be made with oil and brown sugar, which is a bit healthier than margarine and white suger, but still tastes like a cookie... you can also try Agave Nectar, which is a sugar subsitutethat looks like honey, and is much sweeter than sugar but its natural, and does not cause the same sugar high, and then crash.
I also really like whole wheat cous cous and pasta as opposed to white, whole wheat bread, and Quinua is the best. However, I must say I cannot get myself to give up white rice for brown, or to use only egg whites in my breakfast like my mom does.
I also must say that although I LOVE fruits and veggetables, I am too lazy to prepare them during the day and end up only eating them at dinner.
