In the winter, it's tempting to only eat hearty soups and stews made with root vegetables like potatoes and carrots. But we don't want to forget about all the other wonderful vegetables it's now possible to purchase year-round. What should we make with those?

Broccoli, Cauliflower, Asparagus, Zucchini, Peppers, String Beans are all available now and can be easily steamed or roasted with a little olive oil, s & p. Artichokes are also a wonderful vegetable to serve albeit a little more pricey than the others mentioned.
