I wouldn't last 10 minutes on a low carb diet. Seriously, pasta smothered in smooth and creamy cheese sauces is my kryptonite. Sure, it isn't healthy but so long as you aren't eating it every night, it probably isn't the end of the world either.

So, if you're looking for something indulgent and perhaps a bit nutritionally irresponsible, try this sinfully delicious Alfredo sauce.

 

Ingredients

  • 1/2 cup butter
  • 1 (8 ounce) package cream cheese
  • 1 clove garlic (finely chopped)
  • 2 cups milk
  • 6 ounces grated Parmesan cheese (don't use pre-grated or it will make a lumpy sauce and won't have as much flavor)
  • 1/8 teaspoon ground black pepper

 

Directions

Melt the butter in a non-stick saucepan over medium heat. Add the cream cheese and garlic, stirring with wire whisk until smooth. Add milk, a little at a time, whisking to smooth out lumps. Stir in Parmesan and pepper.

Remove from heat when sauce reaches desired consistency. The sauce should thicken rapidly but you can thin it out with milk if cooked too long. If you're getting too much cream cheese flavor, then you need to add more Parmesan. Toss with hot pasta to serve.
