
Sometimes, we just want a recipe that's really simple yet provides a gourmet result. This is an easy, delicious sauce and looks more complicated than it actually is - which is always handy for impressing family and guests without totally exhausting yourself. We've added cheese in the recipe but it's also great without. Since you aren't cooking the sauce it's important to use high quality fresh ingredients to achieve the best flavor.
INGREDIENTS
2 large tomatoes
1 T olive oil
a pinch of salt
a few grinds of black pepper
fresh basil
1/2 cup shredded mozzarella
DIRECTIONS
1.) Start by chopping up the two tomatoes (it will look even better if you use a mix of red and yellow tomatoes).
2.) Drizzle the tomatoes with olive oil and add a pinch of salt and a couple of grinds of black pepper.
3.) Stir it up and push it to the back of the counter for half an hour.
4.) Place a large pot of water on to boil. When the water is boiling, add some salt and pasta (any kind you like, I'm a fan of tagliatelle).
5.) While the pasta is busy boiling, chop up the fresh basil and add it and the mozzarella to the tomatoes. When the pasta is done, drain it and add it in with the tomato mixture. Toss the mixture and serve. Voila!
