Not all kids like Vegetables. Most kids don't. You could try to battle with them and get them to acquire a taste for it. But the truth is Vvegetables just aren't designed for a kids palate. They can be quite strong tasting and hard to get down. Older kids respond better. SO if you're not in the mood for a struggle at mealtime. JUST DISGUISE THE VEGGIES. I like to grate raw zuchini and carrots and mix it into tomato sauce for pasta or mozzarella sticks. Later on you can gradually introduce them to tasty fresh veggies but without the battle.

I think you are completely right!
I like to make them mashed sweet potatoes to sneak some vitamin A in there and sometimes I make it with mixed squash like butternut and acorn. The natural sweetness is like a dessert and goes great with shnitzel.
My in-laws make a great mash with broccoli and potatoes and the kids don't even realize they're eating broccoli!
It's all about hiding the veggies.
I have also heard of lightly basting in olive oil and baking greens. they become crispy and kids eat it as a snack
The following website is really all about great food and getting it to taste wonderful for all the members of your family.I have tried many of the following recipes and my 1.6 yr old grand daughter LOVES THEM Veggies ...Tofu... noodles you name it she loves it .. Give it a look and happy trails to all ....I have some very tastie Ideas .
Try getting some Agave nector for sweetner its made from a cactus plant and use some pine nuts with your veggie your kids will love them I have found tha cutting the veggies into strips and on the thin side works better for me ...just a thought..

A few thoughts to add (note -- I have no kids, but like to cook and have had kids over in the mix):

1) Some adults don't like veggies (including the guy I went on a date with who wanted to know if french fries counted as a vegetable) -- my cousin (and new mom) has a blog all about this: http://myhusbandhatesveggies.com -- with lots of "veggie fake-out" recipes as she calls them

2) You'll be surprised what some kids eat. I had kids over about a month ago and one of the 2 year olds ate a soup I thought was fancy -- cauliflower-hazelnut-turmeric - while the other kids ate carrot sticks and "naked noodles." I wrote about it in http://koshercamembert.wordpress.com/2009/02/26/noodles-and-nuggets/ and include all of the recipes, including one for making your easy chicken "nuggets"

Maybe we should start a group about food?
All my 4 kids eat veggies. When I started them on solid food, I made my own veggies. I also love vegetables myself, so we try to eat veggies at every meal. My most picky eater is my oldest son. He does not like string beans, tomatoes and peppers. At teh same time he eats beat soup, carrot salad adn loves califlower and broccoli. My other 3 eat almost everything! We just never made a big deal out of eating vegetables. Here is your food and whatever you have on your plate, you must eat. And they do! For the most part ;-)
