Need some duck sauce but don't have any on hand? Looking to make you own duck sauce for less? Well, here are two recipes for homemade duck sauce. The first is a quick and easy sauce although it might not be quite the same as what you're used to. The second recipe takes a bit more time but it also make a lot more sauce and it's super tasty.

Quick and Easy Duck Sauce

1/4 cup apricot jam
2 tablespoons white vinegar
1 1/2 teaspoons minced fresh ginger root
2 tablespoons honey

Add the apricot jam, vinegar, minced ginger and honey to the pot. Bring to a boil, and cook uncovered until the sauce has reduced into a thick and syrupy consistency, about 10 minutes.

Deluxe Duck Sauce

5 cups coarsely chopped plums (this is about 2 lbs or 1 kg)
1 cup water
1 teaspoon soy sauce
1 tablespoon apricot jam
1/2 cup packed light brown sugar
2 cloves minced fresh garlic
1/2 teaspoon dry mustard

Place plums in a large pot over medium high heat. Add water, soy sauce, apricot preserves, brown sugar, garlic, and dry mustard. Bring to a simmer and stir frequently until the brown sugar dissolves. Reduce heat, and continue simmering for 40 minutes, or until the plums are completely soft. Remove from heat and allow to cool.

Blend sauce in a food processor or blender until completely smooth, adjusting consistency with additional water, if desired. Cover, and refrigerate until ready to use.
